Honey, Coconut milk and Lime tart

Are you planning a summer vibes party or just want some dessert that is refreshing, healthy or just delicious? If yes, I have a perfect self-created recipe for you.


This original honey, coconut milk and lime tart will sweeten your day as well as the heart, while still keeping your sport and health goals intact. Although be prepared for some planning as well as more complicated cooking techniques.

Ingredients

Crust:

192g all-purpose flour

1 teaspoon honey

1/2 teaspoon salt

64g unsalted butter

100 ml of cold water

Filling:

4 egg yolks

224g coconut milk

2 tablespoons of honey

120 ml of fresh lime juice

Other ingredients you might need:

Lime peels/shreds

Homemade coconut whipped cream (find the recipe on my blog page under the daily activities section)

Instructions

The crust: Step 1: In a large mixing bowl, whisk together the flour, honey, and salt until well combined. Step 2: Add in the cold butter, and using a pastry cutter or fork, cut it into the dry ingredients until you have small crumbs. Step 3: Slowly drizzle in one tablespoon of ice water at a time and gently mix it in until the dough starts to come together. Step 4: Shape the dough into a ball and flatten it into a disc. Cover it with plastic wrap and refrigerate for at least one hour. Step 5: Roll the dough out and gently fit it into a baking pan; trim any excess dough; and decorate the edges. Line the crust dough with parchment paper. (Make sure to cover the bottom and the sides.) Step 6: Then, on the parchment paper, put pie weights so that the crust doesn't lift. Step 7: Bake with the pie weights at 400°F (190°C) for 15 minutes. Then remove it from the oven and take off the parchment paper and the pie weights. Step 8: Lower the oven’s temperature to 350 °F (180°C). Prick the bottom of the tart crust with a fork to prevent bubbling, and put the crust back in the oven. and bake for 15-20 minutes, or until golden brown and cooked through.

The filling: Step 1: Beat the egg yolks until they are thick and turn into a light yellow mixture. Step 2: Slowly add coconut milk and honey while mixing on low speed. Step 3: Gradually add the key lime juice and continue to mix on a low speed just until blended. Step 4: Pour the mixture onto the baked tart crust and bake for 15 minutes. After it is done, remove it and let it cool down.

Useful tips

- If you don't have parchment paper, you can use foil.

- Instead of pie weights, you can use dried beans, dry rice, or another pie form.

- You can top the tart with some lime shreds and homemade coconut whipped cream.
