A Sweet Easter Treat

This Easter, I decided to try my hand at baking something special — a homemade red velvet cake! Perfect for the holiday, it was not just a delicious treat but also a creative challenge.
With Easter just around the corner, I thought it would be fun to bake something festive, colourful, and full of flavour. Red velvet cake seemed like the perfect choice – its vibrant red colour makes it an eye-catching dessert for the holiday, and the rich, creamy texture pairs wonderfully with a cup of tea or coffee. Ingredients
For the Cake:
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups vegetable oil
2 large eggs
1 tsp vanilla extract
1 tbsp cocoa powder
1 cup buttermilk
1 1/2 tbsp red food coloring
1 tsp white vinegar
For the Frosting:
1 cup heavy cream
1/4 cup powdered sugar
1 tsp vanilla extract
Fresh berries (strawberries, raspberries, blueberries, blackberries)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease two round cake pans.
Step 2: In a large bowl, mix together the flour, sugar, baking soda, baking powder, and salt.
Step 3: In another bowl, whisk together the vegetable oil, eggs, vanilla extract, cocoa powder, buttermilk, and food coloring.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until smooth. Add vinegar and stir well.
Step 5: Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes or until a toothpick comes out clean.
Step 6: While the cake is cooling, make the frosting by whipping the heavy cream, powdered sugar, and vanilla extract together until soft peaks form.
Step 7: Once the cake has cooled, spread a layer of frosting between the cake layers and on top. Decorate with fresh berries.
Useful tips
Use gel food coloring for a richer red color, as liquid food coloring may not give the same intensity.
To ensure your cake layers are even, you can use a kitchen scale to measure the batter evenly across the pans.
For extra smooth frosting, make sure the heavy cream is chilled before whipping.
If you don't have fresh berries on hand, try topping with a sprinkle of chocolate shavings or nuts for a different twist!
