A Sweet Easter Treat

This Easter, I decided to try my hand at baking something special — a homemade red velvet cake! Perfect for the holiday, it was not just a delicious treat but also a creative challenge.
With Easter just around the corner, I thought it would be fun to bake something festive, colourful, and full of flavour. Red velvet cake seemed like the perfect choice – its vibrant red colour makes it an eye-catching dessert for the holiday, and the rich, creamy texture pairs wonderfully with a cup of tea or coffee. Ingredients
For the Cake:
- 2 1/2 cups all-purpose flour 
- 1 1/2 cups sugar 
- 1 tsp baking soda 
- 1 tsp baking powder 
- 1/2 tsp salt 
- 1 1/2 cups vegetable oil 
- 2 large eggs 
- 1 tsp vanilla extract 
- 1 tbsp cocoa powder 
- 1 cup buttermilk 
- 1 1/2 tbsp red food coloring 
- 1 tsp white vinegar 
For the Frosting:
- 1 cup heavy cream 
- 1/4 cup powdered sugar 
- 1 tsp vanilla extract 
- Fresh berries (strawberries, raspberries, blueberries, blackberries) 
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease two round cake pans.
Step 2: In a large bowl, mix together the flour, sugar, baking soda, baking powder, and salt.
Step 3: In another bowl, whisk together the vegetable oil, eggs, vanilla extract, cocoa powder, buttermilk, and food coloring.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until smooth. Add vinegar and stir well.
Step 5: Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes or until a toothpick comes out clean.
Step 6: While the cake is cooling, make the frosting by whipping the heavy cream, powdered sugar, and vanilla extract together until soft peaks form.
Step 7: Once the cake has cooled, spread a layer of frosting between the cake layers and on top. Decorate with fresh berries.
Useful tips
- Use gel food coloring for a richer red color, as liquid food coloring may not give the same intensity. 
- To ensure your cake layers are even, you can use a kitchen scale to measure the batter evenly across the pans. 
- For extra smooth frosting, make sure the heavy cream is chilled before whipping. 
- If you don't have fresh berries on hand, try topping with a sprinkle of chocolate shavings or nuts for a different twist!
