Homemade Sugar-Free Twix Bars

Craving something sweet but healthy? Or just want a new, healthier option of a chocolate candy bar?
Then this sugar-free 'Twix' recipe of mine is for you. Just be ready to let the bars sit in the fridge for a little while.

Servings: 16 Difficulty: Medium
Cooking time: 40 minutes Preparation time: 20 minutes Total time: 3 hours 30 minutes
Ingredients
For the cookie layer:
- 114 grams butter, room temperature 
- 100 grams coconut sugar 
- 1 egg 
- 156 grams all-purpose flour 
- 1/4 teaspoon salt 
For the caramel:
- 170g maple syrup 
- 120ml heavy cream 
- 50g unsalted butter 
- dash of salt 
For the chocolate coating:
- 120g sugar-free milk chocolate, finely chopped 
- 1 tbsp coconut oil 
Instructions
The cookie layer:
Step 1: Preheat the oven to 180°C, line a 20x20 cm pan with parchment paper on all sides, and set aside.
Step 2: In a food processor, combine all of the cookie ingredients. Pulse until just combined and the mixture forms a dough ball. Press the dough into the prepared pan, using your hands to spread the dough into an even layer.
Step 3: Bake at 180°C for 20 minutes or until just light golden brown. Take the bars out of the oven and allow them to cool completely.
The caramel:
Step 1: In a small saucepan, melt butter over medium heat.
Step 2: Add the remaining ingredients and mix well.
Step 3: Bring to a boil, turn down the heat to a high simmer, and simmer for 10–20 minutes. Stir occasionally until the sauce has thickened and can coat the back of a spoon.
Step 4: Set it aside to cool down.
Assembly 1:
Step 1: Once the caramel has cooled slightly, pour it over the cookie bars, spreading them into an even layer.
Step 2: Cover the pan with tinfoil or plastic wrap and place it in the fridge for at least two hours or overnight to set.
The chocolate coating:
Step 1: Place finely chopped chocolate and coconut oil in a microwave-safe bowl.
Step 2: Microwave in 20-second increments, stirring between each. Repeat until the chocolate is completely melted and smooth.
Assembly 2:
Step 1: Once the bars are set, pull the parchment paper up to pull the bars out of the pan and place them on a cutting board.
Step 2: Use a sharp knife to cut into 16 bars. (Cut the square in half on one side and then into eights.)
Step 3: Gently drop each Twix into the chocolate, using a fork to flip the cookie bar over to evenly coat all sides of the cookie. Place it on wax paper. Repeat with the rest of the Twix.
Step 4: Place in the fridge to set until the chocolate has hardened, about 15 minutes.
Step 5: Enjoy!
Useful tips
- While making the caramel, you can swap out the heavy cream for some regular or nut-based milk. 
- White or dark chocolate can be used instead of the milk one. 
- If you don't have coconut sugar, you can change it out for some stevia.
