One of the first things I learned to bake as a kid was sponge cake, but what if it starts to crumble or the cooking plan didn't go as well as planned - don't worry I have a sollution!
This cake ball recipe of mine came from a mistake of my own, when I tried to bake a cake, but the base started to crumble. Therefore, I tried to come up with a sollution to save the dessert. But what I came up with was even better. As I've already done half of the job by baking the sponge cake and crumbling it, the only thing left to do was assembly and the results were astonishing.

Servings: 25 Difficulty: Medium
Cooking time: 60 minutes Preparation time: 15 minutes Total time: 75 minutes
Ingredients
The cake batter:
125g all-purpose flour
125g natural honey
5 - 6 eggs (if they are smaller, use 6 of them)
Homemade chocolate:
31g 100% cocoa powder
3 tbsp clarified butter
3 tbsp natural honey
For the construction of cake balls:
3 tbsp greek yoghurt
And any toppings of your choice
Instructions
Sponge cake:
Step 1: Preheat your oven to 180 °C (360 °F).
Step 2: Separate the egg whites from the yolks. Whisk the egg yolks with honey, and then add in the sifted flour.
Step 3: Beat the egg whites until stiff and gently mix them together with the honey, flour, and egg yolk mixture.
Step 4: Pour the batter into a baking pan and bake the cake for 20-30 minutes.
Homemade chocolate:
Step 1: First, melt the clarified butter.
Step 2: Mix the clarified butter with honey and cacao powder.
Constructing the dessert:
Step 1: Shred the cake into smaller pieces.
Step 2: Mix it with greek yoghurt and form the mixture into balls.
Step 3: Cover your cake balls in chocolate and top them with any toppings you like.
Useful tips
- Use a toothpick to check if the cake is done; just stick in the toothpick and if it is dry when you take it out, the cake is done.
- If you need it, you can add more greek yoghurt while constructing the cake balls to make the mixture dough-like.
