Chicken Pasta Salad

I think everyone has had those days were you go back home and want something quick, easy, but still healthy for you to eat. Well I have just a recipe of mine for you!


Just get some some vegetbles from you fridge as well as some pasta from the pantry and let's get started!




Servings: 3 Servings Difficulty: Easy

Cooking time: 10 minutes Preparation time: 5 minutes Total time: 15 minutes


Ingredients

For Dressing:

1 1/2 tbsp homemade mayo

1 tsg lemon juice

1 tsp tomato pesto

Pinch of salt


Other Ingredients:

200g pasta

1/2 tbsp salt

140g cherry tomatoes cut in half

100g chopped cucumber

50g chopped lettuce

100g chopped roasted turkey

Instructions

Pasta


Step 1: In a pot of water, put in the pasta and salt.


Step 2: Boil it according to the instructions on the package or until well done (10 minutes).


Dressing


Step 1: In a small bowl, put all of the ingredients for the dressing and mix them well.


Assembly


Step 1: Put all of the leftiover ingredients, pasta and the dressing in one bowl and mix them well.


Step 2: Enjoy!

Useful tips

  • You can swap out the turkey for some chicken or shrimp.

  • If you don't have tomato pesto, you can use regular pesto or just some oil instead.
